Currently its some variation of military fatigues/greenshirtr&boots/gunner guard plus heaviest combat armour I had to hand setting the route up plus a yellow flight helmet.
Though obviously some of the early ones weren't set up like that so needed hats or odd bits of armour from not having full sets. Also initially they had combat rifles, then laser weaponry, and now I'm giving them gatling laser/miniguns when i get the chance.
Though the newest couple of routes have sentry bots with assaultron laser heads and heavy weapons.
Far harbour has a couple of robots, two dudes with as above, but the flight helmet replaced with a green hood/assault gas mask.

it was a staggering failure on the part of Bethesda not to tag every active NPC with an indication what they are doing. I hated trying to assign roles to people in busy settlements.

But yeah that's originally why I used to dress them. Road leathers and a hat for farmers when I started as easiest thing to find on a raider corpse

There have been a very good little tweaks like that, you can also see which settlements a provisioner provisions under their name and when settlements are attacked a siren sounds rather than just a little pop up note.
