Where can I find what all the different tau support systems are supposed to look like?

The new codex is little help and I do like to keep things wysisyg

Looking at the sprue pics of the new stuff on GW's website it looks like the items are numbered, so that might be a way to tell

is there any way to find out this info without buying a kit, because I want to work out what I want to build before I buy anything

Also, my google-fu was unable to find anything helpful

A lot of the "new" systems might not have the options.

There older systems had pics of them in the last codex.

Multitracker is like a knobly blob with a antenae sticking out
Target Lock looked like a tall thin gun sight....

Basically if it's 'built in' don't worry about it. And if you upgrade a couple of antennae or something is fine. At the end of the day 40k is an open army list game so for all intents and purposes it could be just a software upgrade for the suit!
