In the ecstacy effect it says " every non-vehicle model takes a hit at it's own unmodified strength", would this discount hellbrutes and dreadnaughts? They are walkers they have an S value to hit them selves with.

Yes, it excludes them. Non-vehicle means non-vehicle, not "every model with a Strength characteristic."
