So yeah I'm gonna ask the silly question. After much prodding and encouragement from the other half... lol
Good friends of BoLS...
What are you going to be eating for the 25th?
I shall be having a small gathering for my dear lady, my brother and one of my tenants.
Stew, potato salad, pigs in blankets, bread sauce, stuffed mushrooms and peppers and the obligatory roast.
I'm sneaking in a macaroni cheese bowl this year though. Shhhhh! :D
All cooked and prepared by me (though everyone else is picking the drinks) and then I shall have a gathering with the neighbours the next day. Coz I'm horrible like that. If I shall suffer, they should too!
I tend not to have a typical spread for holidays, but I'd be interested in hearing from you.

Christmas Day Lunch
Roast Turkey with a maple and balsamic glaze (I brine the turkey for 24 hours in a concoction of Christmassy herbs, fruit and spices)
Roast potatoes done in goose fat
Roast parsnips with honey and whole grain mustard
Carrot and swede mash made with butter and double cream
Sprouts with bacon and chestnuts
Gingerbread stuffing.
Cranberry sauce, but not bread sauce. I hate it, proper home made gravy using the neck and giblets.
Green beans, with a flavored butter.
Wife will make dessert, chocolate and salted caramel torte with single cream.
I get most of my inspiration from Delia Smith and Nigella Lawsons Christmas books which have seen lots of use over the last few years.
Evening time is cheese, chutney and crackers.
Try and buy what I can from my local farm shop, but over the years of trying different turkey suppliers I have come to the conclusion good old Marks and Spencer's organic bronze is the way to go.

Turkey, though only a breast as there will be two of us, pigs in blankets, a selection of steamed vegetables (carrots, cauliflower, broccoli, sweede, courgette, peas, beans), roast potatoes, roast turnip, cranberry sauce.
But in break of tradition (normally Chips and cold turkey) Boxing day will be known as Cornish-style pastie day.
Pasties made in the traditional style, damn skirting is hard to find.

Wow, sounds like you guys will be having a better time than me this year!
Although this is the one time of year I eat desserts. Having next to no experience of just what a dessert really is, if you wouldn't mind a few suggestions?
And I hate both figgy pudding and mince pies so they're out lol :)

The traditonal "Christmas cake" is always an option, as long as you like fruit cake it is all good.
Christmas Pudding (though that is a pudding, not a dessert) this is like Christmas cake without the icing/marzipan.
"Yule Log", think swiss roll, but with coca added to the sponge and jam/cream replaced with chocolate butter icing cover in chocolate, one of my favourites.
Trifle, the king of desserts imo. Though I prefer the alcohol free ones rather than sherry variety.
Remember puddings are hot and desserts are cold :)

My wife has made Christmas cake and will be making a Christmas pudding....I like neither.
I will be making a chocolate mousse. It is now a Christmas tradition for me to fill myself to bursting with chocolate mousse.

That yule log does sound tasty but then again I do love a good mousse... So I will look into getting something chocolate sponge based, covered in choccy mousse! I can already feel the pounds piling on... gonna hafta do a marathon this year to work it off :(

I fully intend to spend Chrimbo day in my scuddies, mooching around my flat doing precious little. Mumsie Mystery is sending a food parcel, but I have no idea what it consists of yet. Probably Turkey crown etc.
Christmas 500+ miles away from your family? Bliss! Dr Who in peace! No moronic relatives to bring me down! Nobody stealing my booze! No crap on the telly, only what I wish to watch! Yes sir I am looking forward to it.

I laughed for a solid minute seeing that. My mum would expect me to do at least half of the cooking seeing as I'm nearly as good as she is lmao
Personally I don't care which bird it is I roast up for the big dinner, it's only a centrepiece. The real action is with the trimmings and side dishes.
You ain't seen war 'til you've seen my family scrapping over yorkshire puddings, cripsy roast potatoes and stuffing balls... and then do it all over again when the triple salads and patties arrive.
I have war wounds. True story.
This is why I'm glad I have a quiet christmas dinner planned this year. But there is one thing I need to add to the list I made earlier coz there is room for one more dish.
So friends, what shall it be? I leave that to you.
I'm never afraid to try anything new :D

You're right there! I have enough of my own war wounds thanks. I often forget that just because my hands aren't as heat-sensitive as they used to be, doesn't mean they won't burn.

Maybe it was different down your end but here in the east we had a brief dusting overnight about a week ago.
Course it was all gone by mid-morning, but that still didn't stop the entire transport system here from shutting down for half a day.
Maybe one day we will experience a real snowstorm..? Heaven help Britain if that happens.
We'll be forced to drink our own urine and live off rats by the end of the first week, I swear!
And yes I have been in a real one. I was in Canada in '95 and we had only planned to visit for a few days. We spent 5 days and had to be dug out to get to our flight lol

Roast Duck and two other roasted meats (often beef and lamb, but it varies from year to year. Duck is the only constant)
Gammon Joint

Mashed Swede
Sprouts and boiled Carrots (insisted on by my Dad)
Onion Rings (weird addition I know, but somehow they've become a family tradition)

A LOT of thick onion gravy

...Ok we do have that every year except its honey ham fresh from the butcher which i forgot to list....It pays to have a brother that makes 6 figures and fix's freezers\heat for companys :D we get all the yummy fresh animals to eat :3 (I swear one tiger joke and i will give a hug to the person that makes it!!!)

Seeing as how the Gammon has already been explained I'll skip that. My Mum is a superb cook but pretty sure even she uses pre-made frozen onion rings and just heats them up in the oven. I've never tried cooking duck myself, but it is truly superb meat and it has become our traditional xmas roast as we don't have it any other time of the year. Can't give you any advice about preparing and cooking it sadly, but when it comes to buying it, go for already boned one if you can, so as to get a much better idea of how much actual meat you are getting. Duck has a LOT of bones, so buying one that isn't pre-boned can be very deceptive. This is the reason we tend to have duck with at least one other meat as buying a turkey sized quantity of duck would be rather expensive.
With regards to the gravy, I just tend to use onion gravy granules with hot water in a saucepan, stir until there's no lumps and keep on a low heat to let it thicken, then add in the run off juices from the joint and tray of roasted veg and stir them in and let it thicken again. Pretty basic really.

It's possible, my wife's Canadian and grew up in yellow knife, bloody chilly up there. Now her parents have moved to BC on Vancouver Island :) much milder climate. We were married on the island 10 years ago this coming January. I love Canada and would love to make the move one day. Go Canucks .

I agree it can be, but that's largely because a lot of people tend to coat it in sweet things, like honey, maple syrup etc. My Mum tends to prefer to use something a bit more savoury, last years was coated in a green bean chutney and then baked, which was just incredible.

Dunno if you are anywhere an Iceland store Wildey, but they are doing a Three Bird Roast for £10, which is Turkey stuffed with duck and chicken (they are also doing a ready done Hog Roast for the same price), might make having to "suffer" through Turkey more bearable.

I would prefer to have some venison. I have a shoulder in the deep freeze, but it seems just a waste for the two of us

I see that the price of christmas dinner has gone up. Again. But I must say while I am devastated that my bread sauce and much loved roast spuds are more pricey, I'm not too bothered about the rest. Food has been getting more expensive for a long time now.
I'm down to stocking up on my herb and spice rack only three times a year now and save the precious flavourings for special occasions only.
This is why I envy those who have access to food fresh and straight from the source as it were. I'd love to be able to hunt my own dinner! Lying in wait, downwind... picking the perfect moment to strike!!
Those potatoes would never know what hit them... :p

I get our meat from the local butcher and he was offering a three bird roast, but my family have an aversion to 'new things' foodwise, despite my futile attempts to explain that turkey is the 'new thing'

Were at longleat, I always push the boat out a bit for the family when it comes to choosing a villa. The last few years we have had the "new style executive villa" which comes with access to free wi-fi though out the whole village. As for the exercise, well the gym is ok for your regular types, unfortunately not for me. I could use the treadmills but I think my weight pounding on them would destroy them in seconds and I didn't even look at the weights, I think they went to 75kg max last time I looked.
Nope I treat this trip as relaxation with the nippers, I treat the mrs to a treatment or two at the aquasana and the kids get 100% me.

Sounds cushy, no idea what we were in, but as we went with someone who works there we tried to do everything as she got us on for a good price, fun but not very relaxing...but there was a distinct lack of interwebz lol.

What's with the turkey hatred here?
Granted they're not my favourite bird to deal with, so finicky and hard to cook to perfection... I much prefer duck or loadsa chicken tbh but surely turkeys aren't all bad?
Does anyone know how to make a decent stuffing from scratch? Or a good recipe for it?
And I need to find a decent veggie-safe addition to the christmas spread I posted earlier... does anyone have any suggestions? (for an ovo-lacto vegetarian)

And yes, you're right, animals are delicious when properly prepared. Just a shame half of them taste like chicken! Maybe there's an evolutionary reason for this?

Yes I am hoping that the cheesey-egg flan with pork is seen as an inappropriate response.
On a more serious note, probably a nut roast.
Or Tofu-chicken!
I've eaten kangaroo, which was very nice, lean red meat, a bit like venison, though not as tasty

My only concern with eating meat, is just how much protein I can get down my throat. I generally eat 7-8 times a day and its mostly chicken based. I don't feel guilty, chickens are foul bad tempered stupid animals ;)

How do you know the animal doesn't take it's name from me? ;) I haven't, no. It would seem almost cannibalistic really and that's where I draw the line (unless I'm really hungry). The best animal I've tasted was probably fresh shark, absolutely delicious, like tuna steak only much nicer. I'd recommend it to anyone.

Make sure your Turkeys at room temp before you stick it in the oven, pre heat to 200c
6kg is going to take about 3hours to 3 hours and 15 mins, add an extra half hour if your stuffing your cavity. you want to grab yourself a meat thermometer today if you can. If you get one stick it in between the body and the leg and its done and ready to eat at 65c to 71c
I baste mine every hour and I use an even mixture of butter and maple syrup.
When its done I place mine on a pre heated carving tray and cover mine with tinfoil and then a couple of tea towels. I let it sit for upto a hour which gives me room to do my spuds :)
My family know I never set a specific time for lunch on Christmas Day, it's ready when its ready ;)

Always, but I am obbsesive when it comes to cooking and equipment :), my knives I bought are "Tojiro Senku" which are Japanese folded steel. I took a bank loan out to buy them :o
But after reading your post matey, I'm guessing your humour has a tad bit of " ohhhh matron" to it lol.
