How do?

Recently, I've been getting into my baking. I've started with fairly simple stuff, brownies and rocky road.

Next up, once I've procured some spring form tins, it's cake time. But nothing too dreary. I'm aiming for an 'instant diabetes' chocolate sandwich cake. Chocolate frosting, top layer chocolate sponge. Working downwards, a layer of cream and sour cherry jam (possibly home made) to add piquancy to the sweetness. And the base layer? Sour cherry brownies, using my usual recipe which is dead good!

Now, does anyone have a chocolate cake recipe they can recommend?

In all seriousness I do have a cordon bleu cookbook that is all chocolate recipies, I'll dig one up in a bit. You just want a sponge recipie for the top layer?

For the most part. Though if it has a choccy frosting/icing recipe, I'll have that too!

I love baking me! Plus, it's making me popular with the ladies :p

I'm a big fan of baking - my grandad was a baker (awesome shortbread) and it was my first job out of school. My daughter loves baking too, and her other parent and step-parent own a bakery. Planning on giving her one of grandad's aprons when she's old/tall enough.

Nice! I'm similarly inspired by Grandparents. Though it was only ever for fun/charity, Granny Allan was awesome! Her shortbread literally melted in your mouth. Seems baking skill runs in the family!

Though I do wish I had a gas oven rather than electric. I find them much easier to use!

Gas is infinitely better to cook with as you get a continuous heat rather than electric's on/off/on/off style. It is quite uncommon around here to have gas though (hur hur).

Preheat oven to 180c

20g unslated butter
4 eggs
125g caster sugar
90g flour
30g unsweetend cocoa powder

Melt butter over a low heat and set aside.

Whisk eggs and sugar together in a heatproof bowl. Once combined set over a bain-marie and whisk for 5-8 minutes until the mixture becomes light and doubles in volume. Be careful not to allow the mixture to become too hot as it will lose volume.
Remove from the bain-marie and continue whisking quickly (or use an electric beater on high) until the batter falls in a ribbon from the whisk.

Gently fold in the sifted flour and cocoa in two or three batches, then quickly add the melted butter.

Pour the batter into the tin and bake for ~25 minutes. Allow to cool before turning out.



Chocolate glaze

100g dark chocolate
100ml whipping cream
20g honey

Finely chop the chocolate into a bowl. Heat the cream and honey in a saucepan until simmering and pour over the chocolate, stirring until smooth. Allow to cool enought that it can be spread over the cake with a spatula or palette knife. Refrigerate for 1 hour to set.

Oooh. Never thought of adding honey to the icing. I like that idea!

Can't wait until I have the kit necessary to make this!

Only thing Gotty, Hersheys is genuine, bona fide dog chocolate...

Oh, I agree totally (Cadbury 4 lyfe*), but was too lazy to find a better image for a stupid joke :p



* I loathe at easter when people, knowing my chocoholic status, buy me large quantities of crap stuff. Blerg, I'd rather have one square of Cadbury than a kilo of mystery brand (hell, Red Tulip is still kinda low rent). I mean I'll eat the stuff, but I'll be *****ing in my head the whole time, lol.

Don't piss about with any old recipe, when it comes to indulgent recipes with 1000 kcals per serving then Nigella Lawsons your go to

Any of her cook books are worth a look, but with the season of Chrimbo on its way I highly recommend her Christmas book.

Delia Smith isn't bad either, but when I want to get back into th mrs good books, Nigellas cakes always do the trick :)

But it's measured in cups! That's not proper measuring. Why I would not even have to use my scales!

:) cups as in "measuring cups" all kitchen shops have them, usually on a ring. 1/4 cup, 1/2 cup and 1 cup etc.

Pffffffrt! Granny Allan would be spinning in her grave. If she was in one. Kind of fitting as she was cremated.

Shall see if I can pick some up. Tiny kitchen is tiny, but I can always sort out the cupboard under the sink. I don't use it's space very effectively!

I wish my oven worked well enough to cook.

Also this threads name just sounds like you asking people to hang out with and get stoned.
