Mindstrike missile: 72" range str 4 ap 5 heavy 1 blast one shot psi-shock
psyshock: Any psyker hit by a mindstrike missile suffers the Perils of the Warp in addition to any other effects.
Terminators/ Greyknight strike squads/ Paladins etc: special rules; The Aegis, ATSKNF, Brotherhood of Psykers, combat squads, Perf Enemy Daemons
Brotherhood of Psykers rule: If the Grey Knight unit suffers the Perils of the Warp or any attack that specifically targets psykers, it is resolved against the justicar of knight of the flame (if he is alive) or against a random non-character model in the squad if the justicar or knight of the flame is dead.

So I think it's pretty clear that a mind strike missile against a unit if psykers in Grey Knights would be just a single perils of the warp against the unit. However could it be argued that for every single model hit it causes another perils of the warp?

It is specially stated that for all intents and purposes, anything that has to do with psykers does count units that have brotherhood of psykers rule as a single psyker. Also, who is the psyker of the squad is determined at the point in where wounds were caused, so, when you fire psystrike missile and it causes 1 perils and say, 2 wounds. Perils of the warp is resolved at the time of hits, thus effectively killing your justicar if the blast marker hits. then you roll to wound and apply those respectively.

And even if it did cause multiple Perils, they are all simultaneous and thus all resolved against the same model, so the Justicar would just take five wounds or whatever instead of one. Ultimately, though, you just take a single wound.
