The Pack leader can switch his bolt pistol and/or close combat weapon for plasma/melta/ect, so can he take 2 meltaguns? And if that is so i know you can only shoot 1 weapon but is it twin-linked?

He can take two melta guns but he can't use them both in a turn. Most models are limited to only firing one weapon a turn unless they have a rule that says otherwise (monstrous creatures for example)

Same for the twin-linked, unless it specifically says so in the profile (wraithlords for instance) then you can't do it.

Long fang leaders are not an exception to this

In addition to what TWF stated, having two weapons of the same type doesn't make them twin-linked.

but, you could buy a meltagun and a plasma gun, just to be jack of all trades. Little expensive, points wise, but fun.

So:

Yes, you can buy two

No, they are not twin-linked in any case

Should be pointed out that it's generally best not to buy the leader anything anyways. He'll be the first to catch a bullet anyways.

Unless You give them some bodies to shield them

How are you giving the Long Fangs bodies unless you are dropping Wolf Guard in there (which would be a waste of points).

Also if your pack leader shoots you are unable to split fire which I find more useful.

You add in a wolf guard in term armor with cyclone missiles, and then also add in a rune priest with living lightning, and you watch two targets a turn go boom.
