Have any of you ever started painting and come to realize under that nice coat of paint there is some form of particle - whether a brush hair, cat hair, or any other thing that messes up your paint? Is this common?

Yes, usually a sign that the brush is old or has been mistreated painting bases (most common, save your old brushes for this) or that your pallette is dirty and needs cleaning.
