Just want to confirm my understanding is correct on these:
-Nemesis Force weapons have to roll a psychic test to be activated as force weapons? If the test is failed or not attempted the attacks are not considered to be from force weapons and don't go through armor saves.
-Hammerhand is a seperate psychic test. So normally Grey Knights will have to chose between having STR 4 power/force weapons and having Str 5 NON-power/force weapons, correct?
-To alleviate this issue, stick a Libby or GM or Draigo or Justicar Thrawn in the unit, correct?

Nemesis force weapons are always force weapons, the wielder must make a psychic test to convert unsaved wounds inflicted into Instant Death causing wounds.
So, no, they don't lose their ability to bypass armor saves if you fail/don't take the test.
Most times, said test isn't even taken until after the wound is inflicted and the armor bypassed. (Brotherhood of Psykers can actually trigger this test before slower intiative NFW attacks are resolved, but normally this is not the case.)

Force Weapons always ignore armor saves.
The psychic test is to cause Instant Death.
So, the choices you talk about really are:
-S5 Power Weapon
-S4 power Weapon that causes Instant Death.

More specifically, the psychic test is to inflict Instant Death on one model wounded by the force weapon. A Grey Knight who gets four attacks, for instance, can only inflict Instant Death on one model he wounds even if he causes four wounds on four separate enemy models.

If the test is passed, all wounds caused by the unit's Nemesis force weapons that phase inflict instant death.
Although an GK IC using a force weapon would be treated as you said.

Right. GK units with the Brotherhood of Psykers special rule (all GKs except the Independent Characters) inflict ID with all their attacks. GK Independent Characters can only inflict ID on one target.
